After approx. six years the root is harvested, peeled, and open air dried to reduce its water content to about 10%. This process bleaches the root to a pale-white color. Ginseng is promoted as an ‘all-healing’ adaptogen (increases the body’s resistance to stress) with its anticarcinogenic and antioxidant properties, and finds wide use in Western and Chinese medicine as a muscle relaxant.

Preparation: Bring fresh water to the boil. Fill one teaspoon per 8 oz cup of this Ginseng root into a preheated tea-pot. Pour the boiling water into the roots. Let infuse up to 10 Minutes and serve. To sweeten consider Rock Candy Crystals.
