After approx. six years the root is harvested, peeled, and open air dried to reduce its water content to about 10%. This process bleaches the root to a pale-white color. Ginseng is promoted as an 'all-healing' adaptogen (increases the body's resistance to stress) with its anticarcinogenic and antioxidant properties, and finds wide use in Western and Chinese medicine as a muscle relaxant.
